What you need:
2 cups of Love Earth Organic Jasmine Rice
4 cups of water (usually I agak-agak with finger, the traditional way)
1 tbsp Cooking oil
Love Earth Mushroom Seasoning (to taste)
Love Earth Crispy Chili Flakes (to taste)

Direction:
1. Rinse the 2 cups of Love Earth Organic Jasmine Rice with water a few times.
2. Add water to the rinsed rice and sprinkle Love Earth Mushroom Seasoning.
3. Cook the seasoned rice in a rice cooker.
4. Once the rice is cooked, add 1 tbsp of cooking oil and use a spatula to squash the rice until it becomes smooth.
5. Brush a thin layer of oil on tray.
6. Transfer the rice onto the oiled tray.
7. Use a spatula to flatten the rice and let it cool.
8. Let the rice cool for 3 hours before cutting it into small cubes.
9. Serve the small cubes of rice with Love Earth Crispy Chili Flakes.

Poached Chicken Pumpkin Mee Sua with Love Earth Mushroom Seasoning

Chinese wheat noodles known as mee sua are thin and are frequently used in soups and stir-fries. It is well-known for its delicate texture and mild flavour and is a common comfort food in many Asian countries. In this recipe, I will be using Love Earth Pumpkin Mee Sua (mix), which comes in four mixed flavors – original, pumpkin, spinach, and beetroot, pairs well with savory flavors like chicken and mushrooms.

Poach chicken thighs first, that’s what you’ll need to do. By gently simmering food in water until it is thoroughly cooked, you can prepare food by poaching. Because this recipe calls for moist, tender chicken, poaching is a great way to maintain those qualities. Poach the chicken thigh for eight minutes. The chicken should then be taken out of the pot and submerged for a short while in ice water. By doing so, you’ll be able to stop the cooking process and preserve the chicken’s juicy texture.

Time to prepare the Mee Sua now. The four mixed flavours of Love Earth Mee Sua are original, pumpkin, spinach, and beetroot. I am using the pumpkin flavour in this recipe. Just boil the mee sua in the chicken broth for about 3 minutes. Remember to add in Love Earth Mushroom Seasoning into the soup to taste. Once the mee sua is cooked, serve it in a bowl and add in vegetable and the poached chicken.

This recipe is an excellent choice for a quick and simple lunch or dinner. Additionally, it is a nutrient-dense meal that is high in protein, fibre, and vitamins. Ingredients:

  • 1 chicken thigh
  • 1 Love Earth Mee Sua
  • Love Earth Mushroom Seasoning, to taste
  • 4 cups of water
  • Ice water
  • Vegetables of your choice

Instructions:

  1. Bring water to a boil in a pot.
  2. Add in the chicken thigh and let it poach for 8 minutes.
  3. Remove the chicken from the pot and place it into a bowl of ice water for a few minutes to stop the cooking process.
  4. Cook the Love Earth Mee Sua (Pumpkin) in the chicken broth for 3 minutes.
  5. Add Love Earth Mushroom Seasoning to taste.
  6. Cook until mee sua is cooked.
  7. Add in the poached chicken and vegetables of your choice.
  8. Serve hot and enjoy!
